I think this has been answered from a few years ago but it seems quiet recently. Does anyone know if there is an upgrade which keeps the OEM headunit but adds in functionality of AA or Carplay? Is it possible to add a headunit in from a newer NP300 which comes with this as standard from factory?

Welcome to the forum.
I'm pretty sure that fitting a later model won't work. However there are quite a few head units designed to fit along with replacement centre panels.
