Welcome to the forum.
Living in Oz you have the luxury of plenty of used V8 engines and Marks 4x4 Adaptors. Not sure about the Chevy V8, but the engine bay was designed around a V6 engine to there should be a decent amount space to do the transplant.
As Fondles says, the Toyota V8 is a good option being physically a bit smaller and there seem to be a lot of cheap ones around.
